Instructions:
To prepare this Scotch Woodcock Recipe, first shell and chop the whites of six hard cooked eggs very fine. Rub the yolks to a smooth paste with two tablespoons of melted butter, one-quarter teaspoon of salt, a dusting of paprika, half a teaspoon anchovy essence, or paste may be used, and a teaspoon of cornstarch. Add a cup and a quarter of rich milk and cook in a double boiler to a thick cream. Have ready a number of slices of thin crisp buttered toast; spread a layer of the yolk cream over each, sprinkle with the chopped whites which have been kept warm over hot water, pile on a hot platter, pour over the remainder of the sauce and serve at once.
