- 1½ cups cornmeal
- 1 cup white flour
- 2 tablespoons baking powder
- 2 tablespoons sugar
- 1½ cups milk
- 1 cup boiling water
- 2 tablespoons shortening, melted
- 1 egg, beaten
- pinch of salt
Instructions:
To prepare this Cornmeal Griddle Cakes Recipe, first pour the boiling water over the cornmeal and let stand for 5 minutes. Add melted shortening, sugar, flour, baking powder and salt. Add well beaten egg and the milk. Mix and beat well. Cook on slightly greased hot griddle on both sides.
