• 1 pint of milk
• ½ tablespoonful of vanilla extract
• ½ cup of double cream
• ½ cup of sugar
• ½ junket tablet
• 1 tablespoonful of cold water

Heat the milk, cream, sugar and vanilla to about 90 deg F.; stir in the dissolved tablet, pour into the can of the freezer and let stand in a warm place until the mixture "sets" or jellies. Do not jar the mixture while it is jellying. When cold freeze as in the first recipe. This makes an exceptionally nice ice cream.
