Instructions:
To prepare this Foam Icing Recipe, first take, with a spoon, a little of the syrup and drop slowly in cold water. The sugar should drop out from the spoon into threads.
As more water evaporates and the temperature gets higher, a sample of syrup dropped into cold water forms on the main mass spherical globules, that resemble dark pearls. They will gradually mix with the rest. When this happens, remove from fire. Beat the white of egg stiff and add the syrup (sugar) hot to the white of egg, beating constantly. Add baking powder. When the icing starts to foam, spread on cake.
