To prepare this Madeira Sabayon Sauce Recipe, first put into the inner vessel of a double boiler four egg yolks and two tablespoons of powdered sugar. Have the water in the outer vessel rapidly boiling, and whip the sauce rapidly for three minutes. Pour in slowly half a cup of Madeira wine, stir for two minutes longer; take from the fire and strain over the pudding.
Beat two eggs until very light; then add one cup of confectioners' sugar and one cup of thick cream. Beat until the whole is the consistency of whipped cream.
