Instructions:
To prepare this Roast Fillet of Beef Recipe, first wipe with a damp cloth, fold the thin end under, trim and skewer into shape. Lard the upper side, sprinkle with salt and pepper and dredge with flour. Put some small pieces of salt pork into a pan; when it is hot add the meat, and bake about thirty minutes in a hot oven, basting every ten minutes with the fat in the pan. Serve with brown gravy, mushroom or tomato sauce. To serve, cut the meat diagonally rather than straight across and put a little of the sauce in the center of each slice.
