Put 2 tablespoonfuls of butter into a frying-pan, and when hot add a bay leaf, a sliced carrot and onion, and a sprig of thyme. Let the vegetables cook until they become slightly browned, then put them into a casserole with the chicken; pour in a pint of well-seasoned stock; cover, and cook for forty-five minutes in a hot oven. At the end of that time drop in a dozen potato balls and a dozen mushrooms; season to taste, uncover, and set in the oven to brown. Sprinkle with minced parsley before serving, and send to the table in the casserole.
