Eggplant Saute, Family Style Recipe ingredients
- 1 medium sized eggplant
- 2 eggs
- 1 cup cracker crumbs or untoasted stale bread crumbs
- Salt to taste
Instructions:
To prepare this Eggplant Saute, Family Style Recipe, first pare and dice the eggplant, and cook in enough boiling water, with salt to taste, to make it tender. Drain well. Beat the eggs with 1 tablespoon melted vegetable butter, and add to the eggplant. Add the crumbs, mix well, and pour into a well oiled skillet. Heat gradually, turning with a spatula now and then, until partly browned and thoroughly heated through, and serve immediately.
