Instructions:
To prepare this Puree of Peas Recipe, first boil peas as per previous recipe; when tender, drain and dredge through a sieve; melt 1 tablespoonful of butter; sift in 1 tablespoonful of flour, stir in and season with salt and pepper. Stir in 3/4 cupful of 1/2 milk and 1/2 cream, and beat until very light.
