- 7 cups water

Instructions:

Let simmer gently until thoroughly done. Add salt while cooking. Put the diced carrot and onion into a saucepan, with the vegetable butter and 1/4 cup water, and let simmer until the water is absorbed, stirring often. Add 2 cups of broth from the beans, salt to taste, and let the vegetables simmer until well cooked. Add them to the bean soup, boil up well, add the chopped parsley and serve.
