Instructions:
To prepare this Cream of Lettuce Recipe 2, first cleanse carefully about 3 heads of lettuce, removing all the dead leaves. Place into the inner pan of a double boiler, and bring to boiling as quickly as possible, so as to retain the color. When tender press through a fine sieve, place back into the saucepan over the fire; add 1-1/2 pints of white stock and bring to a boil. Stir smooth a tablespoon of flour with a little milk or water, and add to the soup, stirring briskly, until of a creamy consistency. Then add a tablespoonful of butter; season with salt and pepper, a little sugar, and a dash of mace. Serve very hot.
